How many grams in a spoon and a cup
When there are no scales, a spoon is the measure you actually have. These are average values for a slightly heaped spoon — grind, moisture and settling give a spread of 10–15%.
A US cup is 240 ml, a metric cup 250 ml. Teaspoon and tablespoon are 5 and 15 ml — the same nearly everywhere.
Grains and flour
Sugar, salt, spices

Questions
Is a spoon measured level or heaped?
These values are for a slightly heaped spoon — the way people actually measure in a kitchen. A level spoon holds roughly a third less.
How accurate is this?
Within 10–15%. Grind, moisture and how much the flour has settled all change the weight of the same spoon.
Why two cup sizes?
A US cup is 240 ml and a metric cup is 250 ml. The difference is small but visible on flour and sugar.
